Sweet Potato Pie
From Thanksgiving through the Holidays one of our family favorites is a big slice of sweet potato pie for breakfast with a cup of hot coffee. Traditionally this is served at Thanksgiving, but when you can get sweet potatoes at rock bottom prices per pound then it is a must for eating more often. Below you will find the directions to make one pie. If you choose to make two, then you will need to double this recipe.
Ingredients
1 Pound of Sweet Potato, Boiled and Mashed Thoroughly
1/2 Cup Butter
3/4 Cup Sugar
1/2 Cup Evaporated Milk
2 Eggs
1 tsp Cinnamon
1/2 tsp Nutmeg
1 tsp Vanilla Extract
1 Unbaked Pie Crust
Directions
First you will bring water to a boil and boil your sweet potato. Usually one large sweet potato will equal a pound. I peel my sweet potato, cut into pieces and boil until very tender. Drain and place in mixing bowl. With a fork, mash very thoroughly so that the pie has a consistent texture. Once you have it mashed, add your softened Butter and mix well. Add Sugar, Evaporated Milk, Eggs and Spices. Again, mix well.
Line your pie dish with your unbaked crust. Pour mixture into pie crust. Bake at 350 degrees for about an hour. Knife should come out clean in the center when done.
